2 eggs
1 1/2 cups orange juice
grated orange rind from half an orange (or to taste)
3 tablespoons shortening, melted
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 cups chopped pecans
Beat eggs, add remaining ingredients in order listed and beat until smooth.
Grease heated pan lightly. Ladle batter into pan--4 to 5-inch diameter cakes.
Turn whenever pancakes are puffed, full of bubbles, and firm-edged. Bake other side briefly. |
