Accidentally Yummy Veggieburgers

    This recipe inspired me to come up with what I shall henceforth refer to as the Accidentally Yummy Veggieburgers. To my utter surprise and delight, they were indeed!

    I didn't really follow any recipe, though. I just took yesterday's leftover baked potatoes, green peas and black eyed peas out from the fridge and mashed them. (I had baked them with olive oil, sauteed onions and Vegeta.)

    Then I grated a carrot into the mashed veggies; added some olive oil, wheat germ, chili powder, salt, pepper, and an egg. In the end, I made 7 patty-shaped things using flour and sesame.

    Then I pondered for a while, unsure what to do with them next. I decided to fry three, and to bake the other four. All of them turned out rather nice. See? :)



            Accidentally Yummy Veggieburgers

            Ingredients:

            [ all quantities very, very approximate :D ]

            2 potatoes (medium), peeled, cut into chunks
            1/2 cup green peas, cooked
            1/2 cup black eyed peas, cooked
            olive oil
            chopped onion, sauteed
            1 spoon of Vegeta


            salt and pepper to taste

            1 small carrot, grated
            1 tablespoon wheat germ
            a dash of chili powder
            a drizzle of olive oil
            1 egg

            sesame seeds
            flour

            Sunflower oil (for frying or for greasing the baking pan)


            Preparation:

            Cut potatoes into large chunks and place in greased baking pan. Drizzle olive oil over potatoes and sprinkle them with Vegeta. Bake until almost done.

            In the meantime, sautee onions. Add green peas and black eyed peas into the frying pan, mix well; add salt and pepper.

            Add green peas and black eyed peas mix to the potatoes. Bake for 10 more minutes, or until potatoes are soft on the inside and crunchy on the outside. Let them cool.

            Mash veggies until well blended. Mix in grated carrot, wheat germ, chili powder, olive oil, and egg. Form mixture into veggieburger patties, using flour and sesame. Place patties on platter.

            Heat sunflower oil (and/or olive oil) in large nonstick skillet over medium-high heat. Add veggieburgers to skillet and cook until golden brown.
